North Island, Seychelles
Jeremy joined North Island shortly after opening. During his tenure he progressed as Restaurant and then F&B Manager of the property managing a large and diverse team successfully over a three year period and ensuring the highest levels in hospitality service standards.
As Food and Beverage Manager, Jeremy oversaw the operational delivery across North Island to a wide variety of VIP guests predominantly with very high expectations. The team delivered sustained excellence of above 95% in Conde Nast and Travel and Leisure for the period 2004 to 2007. Of great importance was Jeremy’s ability to plan logistics and simultaneously develop a team competent of using “what resources were available”. Jeremy developed and managed an internationally acclaimed wine cellar and completed regular personalized tastings with guests.

Singita, Kruger National Park
After a year's sabbatical Jeremy joined the Singita operations team as Assistant Lodge Manager where his core function was to oversee all guest areas and service standards at the Lodge. Jeremy managed the guest relations and F&B teams performance and worked in unison with the Executive Housekeeper and Executive Chef to ensure the sustained extremely high level of service that Singita is world-wide renowned for. Jeremy was also responsible for stock control and F&B procurement at the lodge.
Singita is one of the most celebrated boutique hotels world wide and Jeremy gained imeasurable insight working within such a prestigeous group.

Madikwe Safari Lodge, Madikwe Game Reserve
Jeremy commenced work with the MORE group as Operations Manager for the Cape Cadogan and More Quarters properties. Both hotels are boutique in style and feel and offer unique and high quality hotel expereinces in the heart of Cape Town. Jeremy’s role was to oversee the daily management of the properties working with the Group Directorship in doing so.
Thereafter Jeremy was transferred to the new MORE property, Madikwe Safari Lodge, as General Manager. The property was in urgent need of upkeep, systems and firm management. In a little over two years under Jeremy’s management the property saw revenue growth in excess of 50% while systematically completing numerous Capex and Operational projects. A large focus of Jeremy’s was to enable and assist a large work force through the transition of change management and simultaneously develop the team to meet new and higher service levels and demands. This was highlighted with Madikwe being included in the Conde Nast Hot List in 2013.

White Pearl Resorts, Mozambique
White Pearl Resorts is the leading beach resort destination in Mozambique. This new and upcoming luxury property was developed with clean straight lines and opulence in mind. The initial challenges faced included poor stock and financial controls, dysfunctional HR and staff procedures and poor supplier and agent relations. Jeremy worked to change the modus operandi for the group as well as improve market perception. The operational improvements were substantial and rewarded with numerous exceptional reviews and lifelong repeat guests. Jeremy worked to build an Executive Committee who manage the daily running of the property with his other major focus being HR and finance regulatory standards.
The business saw a reduced break-even position by 21% through reduced cost of sales and expenses whilst significantly increaseing sales and a 19% growth in REVPOR. Jeremy has remained in a consulting capacity within the White Pearl Resort’s group.
